May: Cake It Easy!

With summer finally on its way and temperatures heating up, everyone craves a cool, refreshing, sweet treat. This chocolatey, caramelly ice cream cake is the best thing to make in the summertime when you want a dessert to cool you down. In addition to lining the cake with the typical cookie-crumb crust, this recipe has an easy and delicious twist – classic ice cream sandwiches. This will be a favorite dessert for your spring or summer celebration.

Ingredients:
10-12 ice cream sandwiches cut into quarters
1 package of chocolate sandwich cookies
2 quarts of your preferred softened ice cream
Chocolate topping
Caramel topping
Whipped cream

Directions:
Line a springform pan with parchment paper
Place your cut ice cream sandwiches standing vertically to make a border on the springform pan
Crush sandwich cookies in a bag until they’re crumbs
Pour crushed sandwich cookies inside the ice cream sandwich border, smooth with a spatula
Layer with chocolate topping
Fill with softened ice cream until the springform pan is full
Finish with cookies crumbs
Place in the freezer with plastic wrap for at least 2 hours
When ready to serve, decorate with chocolate topping, caramel topping, and whipped cream
