My favorite holiday tradition is the first night of Hanukkah. Normally, I am in charge of making latkes, or potato pancakes for the whole family. Cooking holiday food is something I love to do, and latkes are a labor of love. First you must defrost a bag of shredded potatoes, then mix in flour, egg, salt, and pepper. Then, the skilled part, filling a skillet with oil, and hand molding each latke before dropping them into the sizzling pan. They come out scalding hot, crunchy, golden, and delicious. Perfect to eat with sour cream, applesauce and lots of love. Later at night my family will gather to light the menorah, sing holiday songs, and play a round of dreidel, with M & M’s for the prize.
